Greek Yogurt Loaf with Honey Stewed Peaches




This Greek yogurt loaf cake with honey stewed peaches is a great take on loaf cakes. A loaf cake is more like a dense pound cake that is baked in a loaf tin, instead of a traditional cake tin. This recipe for the greek yogurt version of the loaf cake makes for an extremely light and moist cake that will definitely have you going back for seconds. It is extremely quick and easy to whip up and makes for a great evening nosh.




For the stewed peaches:

3 peaches, de-pitted and roughly sliced

1/3 cup of honey

1 tsp lemon juice

2 tbsp white wine

2 tbsp water

2 tsp cornflour


For the cake batter:

2 eggs, separated

100 gm butter, at room temperature

1½ cups all purpose flour

1/2 cup castor sugar

1 tsp baking powder

1 tsp bicarbonate of soda

1 tbsp vanilla essence

½ cup greek yogurt

A pinch of salt




For the peaches:

Combine the peaches, honey, lemon juice, wine and water in a saucepan over medium high heat, stirring occasionally. Reduce the heat to low once the mixture comes to a boil.

Whisk together the cornflour with 2 tablespoons of water until dissolved. Pour in the dissolved cornflour into the saucepan and give the mixture a good stir. Let it simmer on medium low heat till the mixture reaches a thicker consistency.

Take it off the heat, and set it aside to cool.


For the cake batter:

1. Beat together the butter and sugar until light and creamy. Gradually add in the egg yolks, one at a time followed by the vanilla essence and continue to beat until all the ingredients are well combined.

2. Sift in the flour, baking soda , baking powder salt. Use a flat metal spoon to fold in the sifted ingredients and greek yogurt alternately into the batter.
3. In a separate bowl beat the egg whites on medium high, using an electric beater until stiff. Now gently  fold in the whisked egg whites into the batter.
4. Pour the batter into a well greased loaf tin and spoon over the stewed peaches. Place the loaf tin into a pre-heated oven for 25-30 minutes at 180ºC.
5. Place it on a wire rack to cool. Once cooled, remove the cake from the tin and add a generous drizzle of honey along with some toasted pistachio slivers.
